Cheryl's chicken pie
This was invented by my Mum who like everyone in her family cooks by what is known as "aggaration" (translated estimation) so it's alot of a dash here and a dash there. So can't give exact measurements since it kinda depends on how many you're cooking for.. :] This should serve 3-4 people.
400g skinless chicken breast, diced
1 clove of garlic, crushed
1 can creamed corn or cream of chicken with corn works too
handful of fresh button mushrooms, sliced (or about 1/2 a can?)
2 cups mixed vegetables
salt & pepper to taste
2 sheets of puff pastry or mashed potatoes
1. Fry the garlic in some oil till fragrant, then add the chicken breast.
2. Add the mushrooms and mixed vegetables once the chicken is cooked
3. Add the creamed corn, salt and pepper.
4. Depending on the consistency you want, you may wish to add some flour paste (flour + water) to thicken. Then let cool.
5. Line a baking pan with the pastry if desired, then fill with the cooled pie mixture. Cover the pie with either pastry or mashed potatoes. Brush with beaten egg yolk
6. Bake in the over at 200 celcius (390F) or till the crust is golden brown.
