Super fast sweet potato pockets

4 sheets of Philo pastry or Puff pastry
Couple of sweet potatoes, large cubes (depends on size)
Sugar, cinnamon, nutmeg-optional, to taste
melted butter/oil

1. Boil the sweet potatoes till tender (takes about 5mins in the microwave)

2. Mash potatoes and add sugar, cinnamon and nutmeg (if you have it) to your taste. Leave to cool.

3. If you're using philo pastry, cut to the size you want, and layer. Be sure to brush with melted butter or oil (spray oil works) between layers and use at least 6 layers each.

4. Fill the pastry with the cooled potato mixture. Brush the top of the pastry with beaten egg yolk or oil and bake at 200C (390F) till golden brown.


This also tastes amazing with pumpkin!
